The coffee that is judged by its foam. Everything is stirred before it goes on the heat, then no stirring at all, because any stirring after that breaks the foam. The foam is shared among the cups first, then the coffee is poured over it.

The quantity can be doubled, adjusting the sweetness after tasting, and adding ice to each cup when serving.
Equipment
- Cezve (rakwa) — Its narrow shape is what builds the foam; a wide pot will not raise foam you can share out.
- Small cups — The foam goes into them first, before the coffee.
Method
Put the cold water, coffee, and sugar in the pot and stir until everything is dissolved before heating.
You’ll know it’s ready whenNo clumps of coffee on the surface.
Tip: Stirring once it is on the heat breaks the top and stops the foam from forming.
Place the pot on a very low heat without stirring at all.
You’ll know it’s ready whenA ring of foam has begun to form at the edge.
Tip: Any stirring from here on breaks the foam.
Watch the foam until it rises, and lift the pot before it boils over.
You’ll know it’s ready whenThe foam has reached the rim without spilling over.
First, spread the foam over the cups, then pour the coffee over it gently.
