A juice that isn't made ahead but squeezed to order. Each orange is rolled under the palm before cutting, and squeezing stops at the white pith, because that's where the bitterness comes from.

For juice
The quantity can be doubled, adjusting the sweetness after tasting, and adding ice to each cup when serving.
Equipment
- Citrus juicer — Squeezes down to the white pith without going past it into bitterness.
- Strainer — Catches the seeds before serving.
Method
Roll each orange on the table by pressing down with your palm before cutting it.
You’ll know it’s ready whenThe peel has softened and the orange gives under your hand.
Tip: This breaks the juice cells and gets about a quarter more juice out.
Cut the oranges in half and squeeze them, stopping when you reach the white pith.
You’ll know it’s ready whenThe juice is yellow-orange and has no bitterness in the taste.
Tip: Pressing on the white pith is what makes it bitter.
Strain the juice to remove the seeds, taste and add sugar if necessary, and serve immediately over ice.
You’ll know it’s ready whenThe juice is clear of seeds and cold.
Tip: It loses its vitamins and flavor within an hour — squeeze it to order.
