The seafood is seared for a minute and set aside, then goes back on top once the rice has absorbed its stock — five minutes under the lid is enough to heat it without toughening it. The rice is fluffed with a fork so the grains stay separate.

Method

  1. Dry the seafood and sauté it in oil with half the garlic for a minute, then set it aside.

  2. Sauté the onions and the rest of the garlic until they soften, then add the spices and stir.
