A special-occasion dish from the sea. Straight after boiling, the lobster goes into ice water for two minutes, because without that shock its own heat keeps cooking it until it turns rubbery. Then garlic butter and a few minutes under the grill.

  1. Boil the lobster in plenty of salted water until its shell turns red.
