A rich sauce that needs barely any salt, because the cheeses are salty already. They go in gradually off the heat while stirring, with the blue cheese last and tasted as it goes, because it's strong and the sauce may not need all of it.

  1. Boil plenty of water and salt it well until it becomes as salty as seawater.

  2. Melt the butter, add the cream, and let it heat up without boiling.
