The everyday home stew. Its flavor starts at the bottom of the pot: meat browned in two batches until a golden layer forms, and tomato paste stirred for a full minute until it smells sweet, not sharp. The peas go in at the end so they stay green.

Equipment

  • Heavy pot with a lid — The meat browns in two batches in it, then tenderizes covered.

Method

  1. Heat the oil in a heavy-bottomed pan and brown the meat cubes in two batches until they are browned on all sides.

    10 min
    You’ll know it’s ready when

The meat is brown on the outside and the bottom of the pot has a golden layer on it.

Tip: Don't overcrowd the pot — overcrowded meat boils itself instead of browning.

  2. Add the onions and stir until they soften, then add the paste and stir for a full minute until it turns a deep red.

    5 min
    You’ll know it’s ready when

The onions are translucent and the paste smells sweet, not sour.

  3. Add the hot water and spices, cover the pot, and leave it on low heat until the meat is tender.

  4. Add the peas, grated tomatoes and salt, and continue cooking uncovered.

    12 min
    You’ll know it’s ready when

The peas are tender and still green, and the broth has thickened slightly.

  5. Taste and adjust the salt, turn off the heat and leave the stew for ten minutes before serving with rice.

    10 minYou can walk away
    You’ll know it’s ready when

The broth coats the spoon and does not run like water.
